Ruckle Heritage Farm was established in 1872 by one of Salt Spring Island’s earliest settlers, Gordon Ruckle, and is the oldest operating family farm in the Gulf Islands. Our nine adorable and friendly Nigerian Dwarf goats live across from the farm stand and provide endless entertainment to liven up your shopping experience!

Lamb Shoulder Chops
Shoulder chops are larger in size than rib and loin chops, and have a tougher muscle structure. This means that you will want to cook them slightly longer than a rib or loin chop, and at lower heat. They also benefit from a brine, a rub, or a marinade to help break down the tough muscle fibers. So, just like any other tough cut of meat, they require low, slow cooking, which makes them ideal for your slow cooker. You can’t quickly pan-fry or grill them.

Lamb Riblets
Lamb riblets are a lesser known cut of meat, taken from the area near the lamb shoulder and sawed off from the top of the bones that form a rack of lamb. These small rib bones don’t have as much meat as we generally find with pork ribs, but they are still worth the trouble to cook because their flavor is outstanding.
