Production: Neutral (deodorized) coconut oil is extracted from “Copra” the dried meat of mature coconuts harvested from the coconut palm. Instead of chemicals which are prohibited in organic production, this neural flavoured oil is produced using charcoal filtering, followed by high-temperature steam injection to remove all volatile oil (flavor).
Qualities: Without any coconut flavor or aroma, this coconut oil makes a very versatile cooking oil and can be heated up to 400F.

Kyle’s Black Garlic with Balsamic Vinegar
Slow-“fermented” garlic is extraordinarily unique relatives of their more plain white garlic relatives. Extremely versatile, black garlic can be used anywhere white garlic is used––but with an added tangy, decadent, umami flavor. Please note: black garlic is SOFTER and more easily spreadable––that’s not the garlic gone bad, it’s actually gone right!
Black garlic is created via the Maillard reaction, a caramelization reaction that brings out the deliciousness in many foods, and is heated at a low temperature of 130-140˚F for 7-30 days.

Red Soy Miso – Organic

This miso is aged naturally without temperature control for 12 months in four-ton, hand-crafted Cypress, Redwood, or Fir barrels. The high soybean content in relation to the rice koji (grain inoculated with aspergillus spores) makes it necessary to age this variety through four full seasons because soybeans are more difficult to ferment, with their high protein and fat content, than the high-carbohydrate grains. This gives the aspergillus spores and lactobacillus bacteria sufficient time to completely break down the complex protein and fat molecules into their more digestible constituents.
