All fish are caught by us aboard the Pacific Prowler and are processed locally by SSI Sea Products. This makes all products 100% traceable. With a very limited catch we want to make sure every ounce of these beautiful and nutritious fish are used. We hope you enjoy them as we do: Bones in, collars, fins and bellies on. This does make for variable cuts and sizes but we wouldn’t serve our fish to our friends and family any other way.

    Smoked Sablefish, Haida Gwaii 

    Known also as butterfish, this delectable fish offers a rich and buttery flavor that melts in your mouth. With its high oil content lending to a thick flaky texture, Sable Fish is a true delight for seafood lovers. This is the cold-smoked version – an absolute treat! Warm slightly and serve with charcuterie accompaniments. We like whipped cream cheese, picked red onions and chopped chives.

     

    Sablefish is an excellent source of protein and the highest fish in heart-healthy Omega 3’s above Salmon or Tuna.

     

    Mostly headed abroad to fine-dining restaurants (it’s a favorite as sushi in Japan and can be found on the Nobu menu) – it’s a real treat to have the Pacific Prowler bring some of these beauties back to Saltspring.

All fish are brought in by hand one by one and promptly dressed, head off and guts removed, washed down and put in our flash freezer with temperatures to -35 to ensure the fish remains the highest of quality.

    From The Prowler: All our Salmon are caught off the west coast of Haida Gwaii (Area F) just as they return from the deep ocean. Caught at the peak of their lifecycle, they are extremely healthy. Rich in flavour, full of Omega oils, essential fats, and high in protein, you can’t begin to compare these beautiful fish to farmed fish or fish traveled down the coast that have begun to degrade as they enter the rivers to spawn. Because of the high quality of these west coast northern fish, they are usually sold to international fish markets and fine dinning restaurants around the world. We believe bringing these fish home for our surrounding communities, with 100% traceability, is an important part in keeping our food chain wild and local. All fish are brought in by hand one by one and promptly dressed, head off and guts removed, washed down and put in our flash freezer with temperatures to -35 to ensure the fish remains the highest of quality.

     

    Sold individually by weight and piece. (Collar, Mid, Tail)- Pst… chefs go for the collar as it is the richest.
