    Ingredients: 100% sesame seed oil

     

    Production: Sesame oil is obtained by cold pressing the seeds and then filtering the liquid to remove undesirable particles.

     

    Qualities: the unique nutrients in sesame seeds are well preserved present in this raw, unrefined oil. It contains primarily polyunsaturated and monounsaturated fats. The natural occurring sesame lignans, which help the antioxidant process, have been attributed to have numerous health benefits including blood cholesterol reduction, oxidative stress attenuation, lipid metabolism modification, anti-inflammatory effects, and vitamin-E enhancement, among others. Tocopherol and sesamol, both vitamin-E precursors, are the main antioxidants present in this oil.

    Why we love Cowichan Milk Company

    – Cowichan dairy cows are grass fed (from their own fields) and are supplemented with a little grain in the winter months.

    –  The pasteurization method they use is slow and low. It is the lowest temperature of pasteurization that is legal in Canada (closest to raw milk folks!). It is heated just enough to kill unwanted bacteria but preserves the healthy Omega-3 fatty acids, essential minerals, and fat-soluble vitamins A, D3, and K2.

    – Their farm is a circular operation all on the same site. They grow the grass that feeds the cows and the manure goes right back into the fields for fertilization.

    –  The milk is bottled the day before you receive it on Salt Spring. Any fresher and you would have to be under the cow!

    –   The vanBovens are a third- generation (and going) family of milk farmers.

    Cowichan Milk Company’s dairy is pasteurized “low and slow”, leaving it as close to its natural state as possible.

    Production: This sauce is made from the coconut-blossom nectar of coconut palms. The sap is then fermented and blended with sea salt.

     

    Qualities: Coconut aminos taste similar to a mixture of Balsamic Vinegar and Shoyu yet it has 73% less sodium than soy sauce. It is a soy- and gluten-free way to add a hit of umami.

    Yes it is a little pricey – but it is 100% traceable and reflects the shortages of the past season. Due to disease and climate change- yields were down by 70% and our cost has nearly doubled since last year. In order to offset olive oil use – we have brought in some other oils, such as avocado and grapeseed oil.
