Pak Choy
Pak choy is a vegetable which has been cultivated in China for thousands of years. In addition to being widely used in Chinese cuisine, this is a very versatile, tender, flavorful vegetable which can be used in a wide assortment of dishes.
Classic pak choy has white, crunchy stems and dark green leaves, both of which are edible raw or cooked.
Tender young pak choy only needs to be cooked very briefly, and the leaves take even less time to cook than the stems. Most cooks separate leaves and stems, the stalks can be allowed to cook a bit longer than the leaves.
Many use this vegetable in stir fries, soups, curries, spring rolls, and a variety of other dishes. Its flavor is very mild, with a hint of a tangy bite. It is high in calcium, also has high levels of vitamins A and C.

Dried Garlic
Dried garlic vs Fresh Garlic
When we talk about flavor, there are significant differences between dehydrated garlic and fresh garlic. Dehydrated garlic has a sweeter taste and won’t have a biting flavor. Some people also feel the mildly roasted flavor (it comes from dehydration).
Dehydrated garlic is fresh garlic that has undergone drying process to remove moisture increasing its shelf life while maintaining its flavor.
Use as is, or can be ground into flakes or powder.
Fresh garlic has strong pungant aroma. Requires peeling and chopping and it has a limited shelf life.
Note: Moisture is dried garlic’s enemy. Best kept in an airtight container for the longest shelf life. Hence our farm is offering 2 sizes in glass jars — 125ml jar = 1 oz (32 g) of dried garlic or 250ml jar = 2 oz (64 g)

Apple Mint
Apple mint is most widely used as medicinal tea. Brewed as tea which can alleviate fever, headache, various digestive problems. The crushed leaves of this plant are said to eliminate the pain caused by bee sting, wasp stings and other insect bites. Leaves can be consumed raw or cooked as a potherb.
It is used as a flavoring in salads or cooked foods.Leaves have a similar flavor to spearmint, and are considered to be superior in flavor to that species but are also hairy, which makes them less suitable for garnishing.

Kale
Kale is packed with nutrients. In 1 cup serving, kale provides 3g of fiber; is an excellent source of vitamins C, A, K, and manganese; a good source of vitamin B6, copper, and calcium; and also contains potassium, iron, magnesium, and vitamins B1, B2 and B3. Kale is rich in antioxidants.
Kale can be eaten a variety of ways, steamed, boiled, air fried, eaten raw or juiced. If you want to eat it raw it can be massaged with lemon juice and salt.
